Holler For Them Collards!

Probably one of the most underrated winter greens,
so we’re giving a special holler to the amazing collards this week!

Collard greens are one of our favorite comfort foods during the winter time around here. With their beautiful purple edges and distinct leaf veins they are absolutely stunning to look at on the farm.

They can be cooked for a long time without losing their firm texture so are perfect for braising or added to stews and soups to finish the winter season strong.

Not only do collard greens supply good doses of protein, fiber, calcium and iron, but the leafy green vegetables also provide more impressive amounts of other key vitamins and minerals. We grow them all winter long alongside our kale and chard bunching greens. Make sure to stop by one of our farmer’s markets or add them on in your CSA farm boxes to enjoy these underrated greens!
