What is so great about Spade & Plow’s Braising greens? These hearty greens are a powerhouse of nutrients, and can simply be added to your regimen. With a mix of 4 different types of greens: Chard, Collards, Radicchio, and Dino Kale, we can’t help but to rave about these special leafy greens that are as delicious as they are nutritious.

Kale and Collards occupy similar niches of health benefits as they both belong to the cruciferous vegetable family. Kale and Collards boosts your intake of water-soluble vitamins such as a range of energy promoting B-vitamins, including vitamins B-1, B-5, and B-6, riboflavin, niacin, and folic acid. The benefit of having a variety of greens is that some include more nutrients than others. Kale provides more calcium and iron while vibrant rainbow chard offers antioxidants, beta-carotene, and the minerals manganese and zinc. Radicchio has more than 100 percent of the daily requirement of vitamin K; which is beneficial for healthy bones. By sprinkling some Radicchio into the mix, we have a powerhouse of vitamin K. 1 cup of cooked braising mix can contain up to 4 grams of fiber. Studies have shown that high-fiber foods may promote heart-health, reduce blood pressure, and combat inflammation in the body.

Selection and Storage: The finest selection of Spade & Plow’s braising mix can be found in this week's CSA box or at the Spade & Plow farmers market booth. To store Braising Mix, place it in a plastic bag in the crisper drawer. It will keep fresh for 4-7 days in the refrigerator.

Braised Greens & Savory Mushroom Ball Recipe:

This recipe was created for our CSA members to utilize the produce they received in this week’s CSA box. We hope to inspire you to try new things. This recipe can also be modified by using your favorite spice blends, broths, or meats.


Ingredients:

Savory Mushroom Balls(Vegetarian):

2 cups chopped mushrooms 

1 can Garbanzo Beans

1 egg, whisked

¼ yellow onion 

2 Cloves Garlic

1 tsp Paprika

3 Tb bread crumbs

1 tsp freshly grated ginger 

1 tsp red chili flakes

Salt & Pepper to taste

Braised Greens:

1 bag of Spade & Plow’s Braising greens

1/2 Yellow onion

½ cup Mushroom or Vegetable Stock 

2-3 Tb soy sauce or coconut amino

1 tsp. Toasted sesame oil

1 Tbs. Grapeseed oil

Salt and Pepper to taste

Sesame seeds to Garnish

Recipe:

  1. Preheat oven to 375 F.

  2. Lightly Sauté mushrooms, onions, and garlic.

  3. In a food processor mix savory mushrooms ball ingredients with a few pulses of the processor. It is important that you do not over process the ingredients because over processing will give you goop. If you don’t have a food processor, chop ingredients on a chopping block and blend together in a mixing bowl.

  4. Use a small spoon to form balls and place them on a parchment-lined baking sheet.

  5. Bake for 20 minutes.

  6. Roughly chop braising greens, or leave them whole!

  7. Coat pan with oil. Sauté onions for 2 minutes.

  8. Gradually add greens, turning the leaves with tongs.

  9. Mix liquid ingredients and pour over the greens. Cover with a lid and braise for 20 minutes on low.

  10. Top braised greens with savory mushroom balls, sesame seeds. Serve with rice or enjoy a carb free meal!.
