Delicate flavor, tender texture, and pungent aroma, Green Garlic is a growing favorite among our CSA and Farmer’s Market customers.

The market has just started, and we are stacking spring garlic for all to see.  Customers enter the booth with enthusiasm for green garlic. Application of green garlic is simple: no crushing or peeling. Just chop, chop, chop!

What is green garlic?

Simply put, spring garlic is just immature garlic. We harvest the garlic early before the  bulbous root forms underneath the soil. When garlic is harvested at this younger point in its life, we can utilize the tender garlic shoots that are discarded with mature garlic.

Green Garlic Pesto

A simple, fast, and easy way to use green garlic. This recipe uses the shoots, neck, and slim bulb to make a delicious pesto. Green garlic pesto can be used in pasta dishes, as pizza sauce, or drizzle on top of a frittata.
