Savory Turnip Greens Pesto
Wait, don’t toss those turnip greens! Blend them into a delicious pesto!
This week we’re highlighting a beautiful and nutritious way to cook with the whole vegetable, from root to stem! This one is quick and easy to make and really will add a mildly spicy and savory kick to your plate!
Serve on top of bread or added into your favorite pasta and pizza dish, and you’ll be licking the plate! Our favorite way to enjoy this pesto recipe is lathered generously on top of roasted turnips!

1 (1-lb.) package fresh turnip greens
washed & chopped
2 1/2 tablespoons chopped walnuts
1 garlic clove
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
6 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
1 tablespoon honey
2 tablespoons freshly grated Parmesan cheese
Add the turnip greens, walnuts, garlic clove, lemon juice into a food processor & blend until a paste forms.
Then pour the olive oil and lemon juice and blend until smooth.
Add the honey and cheese, and pulse 3 or 4 times or until blended thoroughly.
Add kosher salt and black pepper to taste.
We recommend serving this dish immediately, or placing plastic wrap directly onto the pesto to help retain its beautiful green color! Enjoy!
