Why Blue Hubbard?
The Great Hub Roast has been a dream of Spade & Plow’s for a really long time. Farmer Sam has made a point to grow Blue Hubbard Squash since starting the farm in 2015, despite its lower yields, inconsistent sizing, and general lack of interest. However, there is something special about growing an heirloom — one that has stood the test of time. One that holds secrets and stories of old, that we can only dream of knowing for ourselves. This American cultivar is nearly 120 years old, coming of age at a time when winter squashes were generally all bland, starchy, with the single redeeming quality that they could be stored for sustenance over a long winter. The Blue Hubbard represents the persistence of a people to hold onto what’s flavorful, rich, and representative of the gift and joy of eating well. We’re writing a new chapter in the Blue Hubbard’s history.
Why the Hub Roast?
Despite a big move, navigating the long years of a pandemic, and starting families, We’ve dreamt of creating an annual harvest festival, of sorts. Creating even just one opportunity a year to have folks out to the farm, inviting opportunities for connection, and to share in the bounty and delight of both our produce, and of one another.
