Soul-Warming Winter Salad

INSPIRED BY THE COLD FROSTY WEATHER AND OUR GORGEOUS SALANOVA LETTUCES, WE’RE EXCITED TO SHARE THIS SOUL WARMING, ANTIOXIDANT RICH SALAD RECIPE!


Loaded with antioxidants from the roasted garlic, Shitake mushrooms, and Romanesco, this salad is packed with hearty and rich flavors pleasing your palate bite after bite. The best part is the Salanova lettuces, all 3 varieties offering its own flavorful delightfulness. INGREDIENTS

  • 1 head Romanesco cut into smaller 1 - 2” florets

  • 2 heads Salanova Lettuce leaves seperated & washed

  • 1 large red onion chopped

  • 7 whole cloves of garlic peeled

  • 1/2 lb. of Shitake mushrooms cut into halves

  • olive oil, salt & pepper

  • Your choice of favorite salad dressing
    **we used : juice of 1 whole lemon, 1 tbsp. balsamic glaze, 3 tbsp. walnut oil, salt and pepper to taste.

DIRECTIONS

  1. Set oven to bake at 450F

  2. Place the chopped Romanesco, red onion, and Shitake mushrooms, and the whole garlic cloves on a foil-lined sheet pan.

  3. Drizzle and coat the vegetables with olive oil, salt, and pepper

  4. Once the oven is heated, bake the veggies for approx. 15-20 minutes or until slightly browned.

  5. Set roasted veggies on top of your Salanova lettuces and drizzle your salad dressing on top to enjoy!
